Sweet Potato Walnut Bread

So as I wait on Baby Cal, I've been occupying some of my time with trying out various quick bread recipe's - and substituting some ingredients to make them as healthy as possible. Here is my Sweet Potato Walnut Bread, which I think turned out really great!

Ingredients
  • 1 cup brown sugar, plus 1 tsp for topping
  • 1/4 cup water
  • 1/3 cup canola or pecan oil
  • 2 eggs
  • 1 1/2 cups mashed sweet potato (1-2 large sweet potato's - bake for 1 hour and 20 min @ 375 degrees or you can use canned)
  • 1/4 tsp vanilla extract
  • 1 3/4 cups whole wheat flour
  • 1 tsp baking soda
  • 1/4 tsp baking powder
  • 1 tsp salt
  • 1 tsp cinnamon
  • pinch ground cloves
  • pinch nutmeg
  • 3/4 cup walnuts (or pecans) plus a few for topping
  • 1 tsp butter to grease pan

Directions

Combine 1 cup brown sugar, water, oil, eggs,
mashed sweet potato, and vanilla - and mix
Combine flour, baking soda, baking powder, salt,
cinnamon, cloves,  and nutmeg

Slowly add dry ingredients to wet while mixing
on low speed to form batter - fold in nuts

Melt butter to grease loaf pan, pour in batter,
and top with 1 tsp brown sugar and a few extra nuts

Bake 55-60 minutes at 350 degrees

What a Baby Shower!

Baby Cal is one lucky little guy to be surrounded by people who love him already and who were so excited to celebrate him! And I am one blessed girl to have such amazing friends and family! Here are just a few pictures from that special day. I had to narrow them down - one of the perks of having a photographer in the family. Thank you Anne Craddock of Coastal Exposures Photography for these amazing pictures!

This post is dedicated to Kristi Hubacher, Katy McCombs, Mari Cooley, Michelle Niland, and Amanda Hovda - who all worked so hard at making this the best baby shower a girl could ask for! And to all my friends and family who came from near and as far away as Cali and New York - love you guys!

Still waiting on Baby Cal who is now 5 days late!
But his room is ready and waiting for him!

This was Hank & I on my due date (11/9).
I think Hank is concerned I might pop if this takes any longer:)

Sweet Potato Puppies

As my maternity leave quickly approaches I thought a blog would be a fun way to let our family and friends keep up with Baby Cal and everything else the Craddock's are up to! I named the blog after two of my favorite things - food and animals!

In my opinion the sweet potato could possibly be the world's most perfect food - it's sweet, savory, and actually good for you (sans brown sugar and butter of course). In fact, stay tuned for the Sweet Potato Bread post - since I plan to use the blog to share some of my favorite recipe's.

And what's not to love about puppies or any dog for that matter. For those that know me, pet rescue is a big passion of mine, and I'm sure will sneak into the blog from time to time. One of my biggest goals as a mom will be to pass on my love of animals, including compassion and respect for all other living creatures. So to start this blog off here is a picture of one of the great loves of my life - my first baby, Hank! I can't wait for him to meet his little brother, which will surely result is some precious pictures to come:)
