So as I wait on Baby Cal, I've been occupying some of my time with trying out various quick bread recipe's - and substituting some ingredients to make them as healthy as possible. Here is my Sweet Potato Walnut Bread, which I think turned out really great!
Ingredients
- 1 cup brown sugar, plus 1 tsp for topping
- 1/4 cup water
- 1/3 cup canola or pecan oil
- 2 eggs
- 1 1/2 cups mashed sweet potato (1-2 large sweet potato's - bake for 1 hour and 20 min @ 375 degrees or you can use canned)
- 1/4 tsp vanilla extract
- 1 3/4 cups whole wheat flour
- 1 tsp baking soda
- 1/4 tsp baking powder
- 1 tsp salt
- 1 tsp cinnamon
- pinch ground cloves
- pinch nutmeg
- 3/4 cup walnuts (or pecans) plus a few for topping
- 1 tsp butter to grease pan
Directions
Combine 1 cup brown sugar, water, oil, eggs, mashed sweet potato, and vanilla - and mix |
Combine flour, baking soda, baking powder, salt, cinnamon, cloves, and nutmeg |
Slowly add dry ingredients to wet while mixing on low speed to form batter - fold in nuts |
Melt butter to grease loaf pan, pour in batter, and top with 1 tsp brown sugar and a few extra nuts |
Bake 55-60 minutes at 350 degrees |
